Every few weeks, Chef John Carpenter unveils a thoughtfully curated Tasting Menu, showcasing a fresh expression of Signature’s most refined flavors. Available Thursday through Saturday evenings, the latest menu begins with delicate tuna paired with ajo blanco, capers, golden raisins, and frozen green grapes, followed by scallop with achiote, guajillo, charred pineapple, and radish.

Guests will enjoy house-made focaccia with fresh ricotta, spring peas, and lemon confit, leading into an elegant elk loin with sunchoke, leek, and blueberry. The experience concludes with a vanilla white chocolate cheesecake, layered with speculoos cookie, London fog whip, and bergamot curd.
